Thanksgiving Turkey Tacos [High Protein, High Fiber]

Ingredients for 8 servings (tacos):

  • 2 lbs of ground turkey
  • 8 high fiber whole wheat tortillas
  • 8 tablespoons of greek yogurt
  • 8 tablespoons of pico de gallo
  • 2 packets of taco seasoning

Serve it up this Thanksgiving with this simple, healthy side dish! First, heat up a very large skillet on medium to high heat. Pour in two cups of water, 2 packets of taco seasoning, and 2 lbs of ground turkey into the skillet. Mix well. Cover the skillet, mixing periodically. When turkey is browned, remove from heat.

Grab a tortilla and spread 1 tablespoon of greek yogurt. Yup, you heard right. Try it out, it works just as good as sour cream and it’s got more protein to boot! Place 1 tablespoon of pico or salsa, and top with 3-4 oz of ground turkey. Quick, easy, and you can’t argue with those macros! Repeat 8 times to serve for your Thanksgiving festivities.
