Salted codfish with sun dried peppers

Ingredients for 4 servings:
– salted codfish already softened 600 gr.,
– sun dried peppers 200 gr.,
– 4 tablespoons of extra virgin olive oil,
– garlic,
– chili pepper,
– parsley.

Pour boil the salted codfish, bone it and cut it into small pieces. In a pan, fry lightly in olive oil, garlic, parsley and sun dried peppers. Pour the mixture obtained on the fish, add chili pepper.

Notes: farmer recipe widespread in southern Italy, particularly in the Basilicata region. This dish has a high protein value and an excellent fiber amount. It provides Fats with good nutritional characteristics.
