Potato Pepper Hash [Vegetarian, Low Fat]

Ingredients for 1 serving:

  • 1 potato
  • 2 bell peppers
  • 1 bundle of green onions
  • 1 red onion
  • 1/2 teaspoon of olive oil
  • A few pinches of salt

Another quick and easy recipe, and low fat to boot! Start by boiling the potato in a pot (or microwave on high for 2 minute, covered in wet paper towel). While the water comes to a boil, start heat on the skillet and throw in the olive oil. As the skillet heats up, dice up the onion. Once the skillet is hot, throw in the diced red onion. Add salt to the onions in the skillet. Cook on medium heat to until the onion becomes caramelized. Chop green onions while red onion cooks, being sure to stir the red onions in the skillet occasionally. Throw in the green onions once diced. Cook for a couple minutes more. In the meantime, guess what? Yep, you guessed it: chop up the bell peppers. I like to be efficient when cooking.

Once bell peppers are chopped, throw them in. Add more salt and mix the hodgepodge. Check on the boiling potato. If it is soft, drain the hot water and run the potato under cold water to cool them off. Once they are not too hot to handle, dice the potatoes into cubes and add them to the skillet. Once everything looks nice and ready, drizzle over with olive oil and mix. Serve and enjoy!
