Parmesan Spinach Cakes [Low Carb, High Protein]
Ingredients for 8 Cakes:
- 12 ounces of spinach BUY NOW
- 1/2 cup ricotta cheese
- 1/2 cup Parmesan cheese BUY NOW
- 2 large eggs BUY NOW
- 1 clove of garlic BUY NOW
- 1/4 teaspoon of salt BUY NOW
- 1/4 teaspoon of pepper BUY NOW
Dang, these look pretty amazing, I can’t wait to try them myself! Preheat oven to 400 F and start by finely chopping the spinach in a food processor. Move the spinach into a bowl and add the ricotta, Parmesan, eggs, garlic, salt, and pepper. Stir and mix it all together.
Grab a muffin pan and coat the inside of 8 cups with some non-stick cooking spray. Divide the spinach cake mix into the 8 muffin cups.
Now bake the spinach cakes for 20 minutes. After taking them out, let them stand in the pan for about 5 minutes. Take them out of the muffin pan and they should be ready to serve. Sprinkle some extra Parmesan on top as a garnish and serve warm!
