Grain-Free Granola [Paleo, Snack]

Ingredients for 6 servings:

  • 2 cups of chopped walnuts
  • 1 cup of slivered almonds
  • 1 cup of raw pepitas (pumpkin seeds)
  • 1 cup of unsweetened shredded coconut
  • 1/4 teaspoon of salt
  • 2 tablespoons of melted coconut oil
  • 3 tablespoons of honey
  • 1 cup of dried cranberries

Try this grain-free granola alternative next time you’re itching for a classic snack. Start by preheating your oven to 300 F. Combine all the nuts, seeds, and coconut into a bowl and mix with melted coconut oil and honey. Once properly mixed, empty contents onto a rimmed cookie sheet and bake for 20 minutes. When the granola is lightly browned, remove from the oven and toss in dried cranberries. Once cooled you can enjoy this on-the-go snack at any point in your day. Just remember, while it is a healthy snack, it is quite energy dense. A little goes a long way with this one!
