Cauliflower Tamales [Low Carb, High Protein]

Ingredients for 9 Servings:

  • 4 free-range eggs BUY NOW
  • 2 wedges of lime BUY NOW
  • 10 oz of boneless, skinless chicken breast BUY NOW
  • 1 teaspoon of adobo seasoning BUY NOW
  • 2 tablespoons of pickled jalapeños BUY NOW
  • 4.5 cups of cauliflower crumbles
  • 9 corn husks BUY NOW
  • 1/2 cup of salsa verde BUY NOW

Cauliflower tamales?? Whaaaat? I had the same reaction. Can’t wait to try this one for myself!

Some pre-preparation is required: soak the corn husks 2 hours before beginning the cooking process. Purée the cauliflower crumbs into a rice-like consistency. Squeeze out any extra water from the puréed cauliflower with a cheese cloth. Add the adobo seasoning and eggs into the cauliflower purée and mix together adequately. Lay out the corn husks and apply the cauliflower/seasoning mixture evenly across all 9 corn husks.

Measure even amounts of the chicken onto each corn husk (should be 1-1.5 oz of chicken). Add several pickled jalapeños and 1/2 a tablespoon of salsa verde on each piece of chicken. Wrap the husks into a closed tamale and steam for 25 minutes.
