Cake of chickpea flour and dried tomatoes

Ingredients for 4 servings:
– chickpea flour 320 gr.,
– brewer’s yeast 10 gr.,
– water (just enough),
– 4 tablespoons of extra virgin olive oil,
– dried tomatoes 80 gr.,
– salt.

Mix flour with water. Add yeast and then the salt. Let rise for 3 hours and then bake. Garnish the cake with some dried tomatoes and extra virgin olive oil. Notes: chickpea flour is rich in complex carbohydrates, proteins and fibers. The flour of this legumes contains also unsaturated fats important for our health and saponins, particular substances that can help us to keep low ematic levels of triacylglycerols and cholesterol
