Cabbage Beef Stir Fry [Paleo, High Protein]
Ingredients for 4 servings:
- 1 tablespoon of sriracha
- 1 tablespoon of sesame seed oil
- 2 tablespoons of soy sauce
- 1/2 tablespoon of coconut oil
- 1 pound of 90% lean ground beef
- 1/2 a head of cabbage
- 2 carrots
- 3 green onions
- 2 cloves of garlic
- 1 tablespoon of grated ginger
- Pinch of salt and pepper
- 1 teaspoon of sesame seeds
Begin by preparing the stir fry sauce: stir together soy sauce, sesame oil, and sriracha in a sauce bowl. Setting aside the sauce bowl, cut one small cabbage in half and remove the core. Peel and shred the cabbage leaves from one of the cabbage halves. Peel skin off carrots and shred using a cheese grater. Cut the green onions into slices and mince the two cloves of garlic. Peel ginger and grate using cheese grater as well.
Heat a large skillet over medium heat. Add coconut oil once hot. When coconut oil is melted, add the ground beef, garlic, ginger, and a pinch of salt and pepper. Cook until the beef is brown. When beef is browned, add in cabbage and carrots, continuing to stir until cabbage is slightly wilted. Stir in the stir fry sauce and green onions. Mix well and turn off heat. Top with sesame seeds and extra sriracha as desired.
